What to do with Leftover Chicken
I heated up 8 corn tortillas and stuffed each one with the grilled chicken. Then I added some shredded low fat Mexican blend shredded cheese. I added 2T of salad beans in each taco (black beans would work best, but I had left over salad beans too). I used one ear of fresh cooked corn, removed the kernels and split between the 8 tacos. I heated in the oven on 350 degrees for about 15 minutes or until heated. Remove from the oven and add avocado slices, tomatoes and shredded lettuce. Dinner is ready!!!
